So here we are at Memorial weekend, the unofficial start to summer and summer usually means BBQ! So, what do Tea and BBQ have in common? Well there are some great Tea's out there that lend themselves very well to cooking. Especially a wonderful Chinese Black Tea called Lapsong Souchong. This Black Tea is slow fired in a wok over Pine Needles and gives it a wonderful deep Smokey flavor that works great in a BBQ sauce or part of a dry rub for either fish or meat. Of course The Tea Caddy has a great Lapsong Souchong Butterfly tea which offers a premium deep campfire smokiness that will work great in this recipe for a BBQ sauce below.

Lapsong Souchong Butterfly BBQ Sauce

Tangy at first taste, but followed by a spicy afterbite, this unique sauce works well as a barbeque/dipping sauce or a marinade and will definitely be a conversation starter at your next dinner party.

Cook Time: 20-30 minutes
Serving Size: varies
Ingredients
• 1 can (14.5 oz) diced tomatoes - do not drain
• 1 can (6 oz.) tomato paste
• 6 oz. water
• 1/2 cup brown sugar
• 1 tbsp. mustard
• 1/2 cup grape jelly
• 2 tbsp. Worcestershire sauce
• 2 tbsp. soy sauce
• 3 tsp. chili powder
• 3 tbsp. lemon juice
• 1 tbsp. onion powder
• 1 tbsp. garlic powder
• 3 tbsps. The Tea Caddy Lapsong Souchong Butterfly Tea leaves
Directions
Mix all ingredients together in a saucepan. Bring sauce to a boil, stirring constantly. Once the sauce is at a boil, put on low and allow it to simmer for about 20 minutes. Stir occasionally. If sauce is too thick, add water.

With Summer fast approaching I get asked this question a lot.
Most Tea's lend themselves very well to bieng served Iced. At The Tea Caddy we have over 20 Fruit Tea's as well as the traditional Blended tea. We also have a very naturally sweet Texas Iced Tea Blend which was specifically blended to drink as an Iced Tea.
One of the other fun ways to get your Tea fix is to eat it! Tea Ice Cream is a new trend that is gaining popularity. Green Tea is by far the most popular, but you could experiment by using Chai Tea or Deep Flavored fruit Tea's like Blood Orange. This week I have included a Receipe for a Green Tea Ice Cream. So please Enjoy!
Green Tea Ice Cream
1 1/2 cups heavy cream
1 1/2 cups milk
1/8 teaspoon salt
2 tablespoons green tea powder
5 eggs
1/3 cup sugar
1. In a medium saucepan over medium heat, bring the cream, milk and salt to a bare simmer. Whisk in the green tea powder until dissolved. Meanwhile, in a medium bowl, whisk together the eggs and sugar.
2. Whisk 1 cup of the hot cream mixture into the egg mixture to temper the eggs, then slowly pour the eggs into the saucepan, stirring constantly with a wooden spoon. Continue to cook over medium heat, stirring constantly, until the mixture thickens to a custard (it will be thick enough to coat the back of the spoon).
3. Immediately remove the pan from the heat and strain the custard into a medium bowl set over a bowl of ice water. Stir the custard until it is cold.
4. Freeze the custard in an ice cream maker until frozen, then transfer to an airtight container and freeze until hardened.
Each one-half cup serving: 269 calories; 6 grams protein; 15 grams carbohydrates; 0 fiber; 21 grams fat; 12 grams saturated fat; 198 mg. cholesterol; 115 mg. sodium.

Wow! What a great time The Tea Caddy team had attending The World Tea Expo in Las Vegas this past weekend. A big thank You goes out to all the people involved in putting this event together.
It is so much fun visiting with vendors from around the World, India, China, Japan, Korea, Sri Lanka, Germany, England, USA and to see all the new products coming on to the market. Tea has really grown from 10 years ago into a multi Billion dollar Industry and has brought as lot of Innovation with it. We met with Estate owners who have changed over from traditional farming to Organic farming and are now educated in Fair Trade practices and Sustainability practices that will ensure the survival of the Tea industry for many generations to come.
The array of tea is astounding, with so much choice in flavors and varieties everything from the freshest plucked Sencha’s to Darjeeling’s, Assam’s and South African Rooibos and Ceylon Tea from Sri Lanka. We were able to meet Old friends and make lots of new ones as well.
We met with our vendors and are pleased to announce some new exciting tea’s and Teaware coming soon! So stay tuned for the latest updates.
The down side if there was one was that the economy definitely impacted the Show with some big names missing from the Showroom floor and a smaller showroom with less attendance (not official but it certainly seemed that way), but it also allowed some smaller companies to promote themselves and reach a larger audience.

In just a couple more days Tea Lovers from around the world will decend upon Las Vegas for the annual World Tea Expo. This is the largest Expo in the USA dedicated to Tea and everything to do with Tea. For me as a Tea Business owner it is an exciting time when I get a chance to meet other Tea Lovers, Business Owners and Vendors and re-educate myself on my business. Hundreds of new Tea Flavors and products will be introduced during the four day Expo and this year they have introduced a new World Tea Expo Tea Cocktail Competition! I cannot wait to see what creations are delivered.
